Red Velvet Cupcakes on a Keto Diet

Instructions:

Preheat the oven to 350 degrees Fahrenheit. Set aside a muffin tray lined with cupcake liners or greased with coconut oil spray.

Whisk together almond flour, coconut flour, erythritol, cocoa powder, baking powder, baking soda, and salt in a medium mixing bowl.

Combine eggs, melted butter, stevia, vanilla, vinegar, and red food coloring (or natural coloring) in a separate bowl. Combine the wet and dry ingredients in a mixing bowl and stir until just incorporated.

Fill the cupcake liners three-quarters full with batter. Cook for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before using.

3-4 minutes on medium speed, whip the cream cheese and butter together with a hand mixer until smooth.

Scrape down the bowl’s sides before adding the remaining ingredients. 3-4 minutes of mixing until frothy If you want it sweeter, add more powdered erythritol, or heavy cream for a fluffier texture.

As desired, pipe or spread on cupcakes.
